Sam Potter
Sam has more than 20 years' experience working at multi award-winning and hatted restaurants in Queensland and is an exciting addition to the region’s flourishing food and wine scene.
Sam began his career as an apprentice at e’cco bistro, the landmark Brisbane restaurant owned by renowned chef and author Philip Johnson.
"Phil's food philosophy was simple; the ingredients had to be seasonal, fresh and wherever possible, local'' says Sam, "Most people go out to eat something they wouldn't prepare for themselves at home. It can be simple, comfort food or it can be something new, something a little different, but what it absolutely has to be is fresh and prepared with care.''
